Umbria Day 3

Day three in Umbria, and more delicious food and fun cooking classes!
 Relaxing in the cool Umbrian morning.  I could have stayed there all day!
 First cooking class - tiramisu.  A very simple dessert, I think I would make it again by dipping the cookies into a citrus juice rather than coffee.  Very easy and yummy!
This was, in my opinion, the best dish of the trip - pasta Norcina style. It was sooo delicious, but so unhealthy!  First some butter and olive oil in the pan, then throw in a little sausage.  Then pour in the cream, let it get warm, and stir in the pasta.  Last of all, the truffle oil.  So basically fat, fat, more fat, carb, and more fat.  But sooo good!

 First you dredge the veal in flour...
 Then you cook it in a little olive oil.  Sprinkle on a little salt to enhance the flavor.  Then deglaze the pan with a little liquid, traditionally red wine for red meat, white wine or lemon juice for white meat and fish. Let it cook until the sauce is nice and thick.
 And then eat!
One of the best part of this trip was meeting our Italian hosts. To the left is Giaccomo.  He was the sous chef and assistant professor during the cooking classes.  He had such a fun loving personality, we were never sure if he was joking or serious (especially since half of his jokes were in Italian :).  He loved DJ and would find it a point to say his name as much as possible and joke with him during every cooking class. Next is Giovanna, the master planner behind the whole week, and finally Simon, our Italian master chef and professor.  They definitely made the experience as fun as it was!

    1. 'Berry crew Christmas party, Norcina style, compliments of the Sheltons. I even have some fresh truffles to make the dish authentic - you only find that at five star restaurants. Nothing but the best for you guys ;)
